Don Luis opened Maya Café on Route 9 in 2005 with a single goal: bring the flavors of his grandmother's Yucatán kitchen to the Hudson Valley. Twenty-one years later, the molcajete is still pulled tableside, the cochinita pibil still slow-braises in banana leaves, and the recado rojo is still the answer to every question.
As Don Luis steps into an ambassador role, fresh ownership has reinvigorated the restaurant and continues the proud traditions he exemplified.
